Bérard
HILLTOP village Cadière d'Azur, overlooking a vammey of vineyards, is home to one of France's most renowned Provençal cookery courses, run by Danièle and René Bérard at their 18th century farm. The four-day course, from 9am to 1pm, addresses rustic Provençal cooking, and guests (maximum 12, staying in farmhouses) use vegetables and herbs from the garden for traditional dishes such as honey-roasted lamb with rosemary. Focus is on meat the first day, vegetables the next, then fish and dessert - mastering the Bérards' acacia honey and lavender sorbet. (...) |
